CHOCOLATE ZUCCHINI BREAD

You won’t even realize there are veggies in this moist and fudgy bread. The sweet rich chocolate flavor is out of this world.

INGREDIENTS

Chocolate Zucchini Bread Ingredients

Bread

  •  1/2 c. melted butter, plus more for brushing pan
  •  1/2 c. cocoa powder, plus more for dusting pan
  •  1 1/4 c. all-purpose flour
  •  1 tsp. baking soda
  •  1 tsp. cinnamon
  •  1/4 tsp. kosher salt
  •  1 c. sugar
  •  1 egg plus 1 egg yolk
  •  1 tsp. vanilla extract
  •  2 c. grated zucchini from 1 large or 2-3 small
  •  2/3 c. chocolate chips

Topping (optional)

  • 1/4 cup granulated sugar
  •  2 tsp ground cinnamon

  • Mini food processor
  • Box grater

INSTRUCTIONS

  • PREP TIME: 15 minutes
  • COOK TIME: 50 minutes
  • COOL TIME: 10 minutes
  • TOTAL TIME: 1 hour 15 minutes

  1.     Preheat oven to 350 degrees F (175 degrees C).
  2.     In large bowl, whisk together flour, cocoa powder, baking soda, cinnamon, and salt.
  3.     In another large bowl, stir together sugar and egg and egg yolk until smooth, 1 minute.
  4.     Add melted butter and vanilla extract and mix until smooth.
  5.     Add zucchini, then add flour mixture in 3 additions.
  6.     Fold in chocolate chips.
  7.     Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.
  8.     Let the loaf cool on a rack for about 10 minutes before turning out onto a rack to cool completely.
